Today I have a recipe for you that I’ve been dying to share since I first made it a few weeks back!
Our foodie community has within its ranks a high number of people keen on taking control of their health and wellness who choose to follow one or more ‘lifestyle’ diets such as Paleo, Low Carb High Fat, GAPS, Celiac to name but a few. Most of these eating protocols limit or exclude grains as they are wary of the effects that gluten and other components of the grain might have upon the digestive system and other parts of a healthy body.
One of the main challenges with making a food-related lifestyle choice, and particularly if you are intending to introduce it to your family is bread. Yes that staple we all grew up with and many of us crave. Well, after many an experiment with my own family, I think I’ve got it!
Grain free bread recipes I have tried over time have generally turned out too eggy, too solid with little rise or just too expensive with the enormity of costly ingredients. On the flip side, I love this bread for its light and fluffy texture, its high fiber (for those uninitiated, psyllium husks are great at keeping you regular) and quality protein. It also has a lovely savory taste, particularly with the addition of caraway seeds (or other spices or herbs of your choosing).

Fluffy Grain-Free Sunflower Bread
- 4 large eggs, separated
- 2 large egg whites (reserve 2 egg yolks for another recipe)
- 2 tbsp toasted sesame oil (30 ml/ 1 fl oz)
- 2 tbsp ghee, melted (28 g/ 1 oz)
- ½ cup lukewarm water (120 ml/ 4 fl oz)
Note for eggs: you will need 4 egg yolks and 6 egg whites in total
- ⅔ cup psyllium husk powder (80 g/ 2.8 oz) – always go by weight
- ¼ cup flax meal (40 g/ 1.4 oz) – always go by weight
- 1 tsp baking soda
- 1 tbsp caraway seeds
- 1 tsp salt
- 2 tsp cream of tartar or 2 tsp of lemon juice or 2 tsp apple cider vinegar
- ½ cup sunflower seeds (70 g/ 2.5 oz)
The reason you shouldn’t use only whole eggs is that the buns wouldn’t rise with so many egg yolks in. Click here for directions
